How to Choose an Authentic Brazilian Churrascaria

Category: Restaurants  ·  avenidabrasil.nl/restaurants/how-to-choose-authentic-brazilian-churrascaria

A Brazilian churrascaria is one of the world's great dining experiences — when it's done right. But the quality varies enormously. Here's how to tell the real deal from a pale imitation.

Green Flag Signs of an Authentic Churrascaria

1. Picanha is on the menu and treated with respect.

Any authentic churrascaria worth visiting will have picanha. Picanha should be offered medium-rare and sliced fresh at your table.

2. The meat comes in waves, not all at once.

In Brazil, churrasco is a paced, leisurely experience. Sausages and chicken arrive first. Beef comes later. The pacing is intentional and part of the ritual.

3. They use a green/red card system.

The classic table control system — green side up means "keep the meat coming," red side up means "please pause." This is a hallmark of a genuine rodízio experience.

4. The salad bar includes hot Brazilian sides.

Authentic churrascarias include farofa, rice, beans, vinagrete, pão de alho, and polenta. A weak salad bar suggests the restaurant is cutting corners.

5. They serve real cachaça.

An authentic churrascaria should have a selection of quality cachaças, not just Caipirinha-premix.
