Picanha Steak โ€“ How to Cook Brazil's Favorite Cut

Category: Recipes  ยท  avenidabrasil.nl/recipes/picanha-steak-how-to-cook

Picanha is arguably the most prized cut of beef in Brazil, yet it remains surprisingly under-known in much of the world. In the US it is sometimes called the "rump cap" or "top sirloin cap." In Brazil, it needs no explanation โ€” picanha is picanha, and it is always the star of any Churrasco.

What is Picanha?

Picanha is a triangular cut taken from the top of the rump. Its defining feature is the thick, intact fat cap โ€” roughly 1โ€“2cm of beautiful white fat that runs across the entire top surface. This fat cap is absolutely essential and should never be trimmed off before cooking. It bastes the meat as it cooks and provides enormous flavor.

Selecting a Good Picanha

A whole picanha weighs between 1โ€“1.5kg. Beyond that weight, butchers are including parts of the rump that dilute the cut's quality. Look for: a thick, uniform fat cap; deep red, marbled meat; and weight under 1.5kg.

Churrasco Method (Traditional)

  1. Cut the whole picanha into C-shaped steaks, 3cm thick, keeping fat cap on.
  2. Fold each steak and thread onto a long metal skewer through the middle.
  3. Season generously with coarse salt only.
  4. Grill over charcoal on high heat, 8โ€“10 min per side. The fat will drip and flame โ€” this is correct.
  5. Slice thinly against the grain and serve.

Cast Iron Skillet (Indoor Method)

  1. Score the fat cap in a crosshatch pattern without cutting into the meat.
  2. Season with coarse salt and black pepper.
  3. Place fat-side down in a cold cast iron pan. Heat slowly โ€” let the fat render for 5 minutes.
  4. Increase to high heat. Sear fat side for 3 minutes until deep golden.
  5. Sear meat sides for 2โ€“3 minutes each for medium-rare (internal temp 54ยฐC).
  6. Rest for 10 minutes, slice thinly against the grain.

Never trim the fat cap before cooking picanha. It is the source of the cut's extraordinary flavor.
