Cachaça (pronounced ka-SHA-sa) is Brazil's most famous spirit and one of the world's most consumed distilled drinks — yet outside Brazil, it remains remarkably under-appreciated. This sugarcane-based spirit is the soul of the Caipirinha and a fascinating category unto itself.
What is Cachaça?
Cachaça is distilled directly from fresh sugarcane juice — not from molasses, which is what distinguishes it from rum. This fundamental difference gives cachaça a fresher, more vegetal character: you can taste the green, grassy quality of the sugarcane itself. Brazilian law defines cachaça strictly: it must be produced in Brazil, distilled from fresh sugarcane juice, and bottled between 38–48% ABV.
Silver vs. Aged Cachaça
- Silver (Prata) Cachaça — Unaged or briefly rested. Fresh, grassy, slightly fruity. Best for Caipirinhas and cocktails.
- Aged (Envelhecida) Cachaça — Aged in Brazilian native wood barrels (amburana, jequitibá, balsamo) or imported oak. Takes on wood character, dried fruit, vanilla notes. Best sipped neat or over ice.
