Walk into any Brazilian restaurant outside Brazil and you will almost certainly see "Caipirinha" on the menu. But look more closely and you might also spot "Caipivodka" or "Caipiríssima" — and the differences between them are more significant than most menus let on.
The Caipirinha — The Original
The Caipirinha is made exclusively with cachaça — Brazil's native sugarcane spirit. This is non-negotiable. The word "Caipirinha" legally refers only to the cachaça version. Flavor profile: Grassy, tart, slightly earthy, deeply refreshing.
Caipivodka — The Mild Alternative
Replace cachaça with vodka and you get a Caipivodka. The result is cleaner, lighter, and more neutral. Flavor profile: Clean, bright, tart. The lime and sugar are the clear stars. More accessible to non-cachaça drinkers.
Caipiríssima — The Caribbean Variant
Replace cachaça with white rum and you get a Caipiríssima. The rum's molasses-derived sweetness gives this version a slightly fuller body and a hint of tropical sweetness. Flavor profile: Slightly sweet, tropical, tart.
